The Baker’s Story’s cheese brownies make the perfect tea-time nibbles.
Cheese and chocolate are two of the most wonderful indulgences on the snack menu but when you combine them both, it’s a whole new level of awesomeness.
The cheese brownies from The Baker’s Story, which first opened in 2004 at the nondescript Sin Ming Centre, will attest to that claim.
Having built up a following over the past years, it opened a second branch at Orchid Hotel along Tras Street.
“Everyone loves chocolates, but by adding the cheese, it gives the traditional brownie an interesting twist in terms of taste,” shares chef and owner Eric Tan, who spent two decades as a pastry chef at big hotel chains. It was only after he enrolled at the SHATEC hospitality training institution as a culinary student that he discovered his passion for baking.
Must-tries are the signature Cheese Brownie (S$2.20 per slice) and the Crunchy Cheese Brownie (S$2.80), though fancier flavors include the Mint Cheese Brownie (S$2.30) and Orange Cheese Brownie (S$2.80).
There are also non-cheese varieties—Banana Brownie and Walnut Chocolate Brownie. The texture is rich and smooth, with a full, cheesy flavor that perfectly straddles sweet and savory. The recipe is the end product of six months’ worth of experimentation with ingredients.
The shop also sells cheesecakes and popular mousse cakes such as Tiramisu and Royal Chocolate.
